Slovakian Braised Pork and Root Vegetables
A hearty, comforting dish from Slovakia, featuring slow-cooked pork and root vegetables in a rich, flavorful sauce.
Ingredients
- β1.5 kg pork shoulder
- β3 carrotspeeled and chopped
- β2 parsnipspeeled and chopped
- β2 onionschopped
- β3 cloves garlicminced
- β2 tsp fenugreekground
- β250 ml red wine
- β1 L beef broth
- β2 tbsp mason jar apple cider vinegar
- β2 tbsp brown sugar

Season the pork shoulder with salt and pepper.

Heat a large Dutch oven over medium-high heat.

Sear the pork shoulder until browned on all sides, then remove it from the pot.

Add the chopped onions to the pot and cook until they're softened and lightly browned.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and parsnips to the pot and cook for 5 minutes.

Add the red wine to the pot and cook until it's almost completely reduced.

Add the beef broth, fenugreek, brown sugar, and apple cider vinegar to the pot.

Return the pork shoulder to the pot and bring the mixture to a simmer.

Transfer the pot to the oven and braise the pork for 2.5 hours, or until it's tender and falls apart easily.

Remove the pot from the oven and let it cool slightly.

Shred the pork with two forks and serve it with the braising sauce and roasted root vegetables.
