Australian Lentil Stew
A hearty, comforting stew filled with the flavors of Australia, made with red lentils and a variety of savory vegetables.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 stalks celerychopped
- β2 tablespoons tomato pastedried
- β4 cups beef brothlow-sodium
- β1 teaspoon dried thymedried
- β1 teaspoon saltto taste

Heat oil in a large pot over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes.

Add garlic and cook, stirring constantly, for 1 minute.

Add carrots and celery and cook, stirring occasionally, until tender, about 5 minutes.

Stir in tomato paste and cook for 1 minute.

Add lentils, beef broth, thyme, and salt. Bring to a boil, then reduce heat to low and simmer, covered, until lentils are tender, about 30 minutes.

Season with additional salt to taste.
