Saudi Arabian Vegan Tagine Stew
A rich and flavorful vegan stew inspired by the traditional Saudi Arabian tagine, made with a variety of aromatic spices and silky rice.
Ingredients
- β1 cup Rich saudi arabian rice
- β2 medium Silky carrots
- β1 cup Lamb substitute (mushrooms)
- β1 medium Onion, chopped
- β1-inch piece Ginger, grated
- β2 tsp Cumin powder
- β1 tsp Cinnamon powder
- β1 tsp Turmeric powder
- βto taste Salt
- βto taste Black pepper
- β4 cups Water

Heat oil in a large saucepan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add ginger and cook for 1 minute.

Add mushrooms, carrots, cumin, cinnamon, turmeric, salt, and pepper.

Stir to combine and cook for 2 minutes.

Add water and bring to a boil.

Reduce heat to low and simmer, covered, for 20 minutes.

Stir in rice and continue to simmer, covered, for 10 minutes.
