Slovakian Cheese and Potato Soup
A hearty, comforting soup originating from Slovakia, made with cheese, potatoes, and a touch of paprika.
Ingredients

- β1 cup, grated CheeseSlovakian cheese or similar
- β2 tablespoons Butter
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β2 tablespoons All-purpose flour
- β4 cups Chicken broth
- β1 teaspoon Paprika

Melt butter in a large pot over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for an additional minute.

Add diced potatoes, grated cheese, flour, paprika, salt, and black pepper. Stir to combine.

Gradually add chicken broth, whisking continuously to avoid lumps.

Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes, or until potatoes are tender.
