Thai Sweetcorn and Smoky Stew
A flavorful and spicy Thai-inspired stew made with sweetcorn, smoky Dutch sausage, and rich flavors.
Ingredients
- β250g smoked Dutch sausagesliced
- β300g sweetcornfresh
- β2 tablespoons vegetable oilfor cooking
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 tablespoons Thai red curry pastefor added heat
- β1 can coconut milkfull-fat
- β2 tablespoons fish sauceoptional
- β1 tablespoon sugarto taste
- βto taste saltfor flavor
- βhandful Thai basilchopped, for garnish

Heat the oil in a large pan over medium heat.

Add the sliced sausage and cook until browned, about 3-4 minutes.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the Thai red curry paste and cook for 1-2 minutes, until fragrant.

Add the sweetcorn, coconut milk, fish sauce (if using), and sugar.

Bring the stew to a simmer and cook for 10-12 minutes, until the sweetcorn is tender.
