Braised Beef Kitfo in Red Wine
A hearty French dish that combines the flavors of rich, smoky beef kitfo with a bold red wine reduction.

- β2 medium carrot
- β2 stalks celery
- β1 cup red wine
- β2 cups beef broth
- β2 tablespoons all-purpose flour
- β2 tablespoons butter
- β2 sprigs thyme

Season the beef kitfo with salt and pepper.

Heat butter in a large Dutch oven over medium-high heat.

Sear the beef until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the sliced onion, carrot, and celery to the pot and cook until the vegetables are softened, about 5 minutes.

Add the red wine to the pot and bring to a boil, scraping up any browned bits from the bottom.

Bring the mixture to a boil, then cover the pot and transfer it to the oven.
