Filipino Andouille Noodle Stir Fry
A twist on traditional stir-fries, this recipe combines the rich flavors of andouille sausage with the earthy taste of bihon noodles and the crunch of vegetables.
Ingredients
- β1/2 pound, sliced Andouille sausage
- β8 ounces Bihon noodles
- β2 tablespoons Vegetable oil
- β1 medium, chopped Onion
- β1 medium, sliced Bell pepper
- β3 cloves, minced Garlic
- β2 tablespoons Patis (fish sauce)
- βto taste Salt
- βto taste Black pepper

Heat oil in a large skillet or wok over medium-high heat.

Add the sliced andouille sausage and cook until browned, about 5 minutes.

Remove the sausage from the skillet and set aside.

Add the chopped onion and sliced bell pepper to the skillet and cook until the vegetables are tender, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the cooked sausage back into the skillet and stir in the patis, salt, and black pepper.

Cook for an additional minute, until the flavors are well combined.

Add the cooked bihon noodles to the skillet and stir-fry for about 2-3 minutes, until the noodles are well coated with the sauce.
