Jamaican Smoked Chicken Curry
A rich and flavorful curry dish made with smoky chicken, Jamaican spices, and a blend of Indian-inspired spices.
Ingredients
- ●1 1/2 pounds Chicken Thighsbone-in, skin-on
- ●2 tablespoons Jamaican Curry Powder
- ●1 tablespoon Smoked Paprika
- ●2 inches, sliced Ginger
- ●3 cloves, minced Garlic
- ●2 tablespoons Coconut Oil
- ●1 medium, chopped Onion
- ●1 medium, chopped Red Bell Pepper
- ●2 tablespoons Tomato Paste

Heat oil in a large Dutch oven over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken from pot and set aside.

Add more oil if necessary, then sauté onion and bell pepper until softened.

Add ginger and garlic and cook for 1 minute.

Stir in curry powder and smoked paprika; cook 1 minute.

Add tomato paste and cook for 1 minute.

Return chicken to pot and add enough water to cover.

Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes.
