Spanish Paella with Makrut Lime Leaves
A twist on the classic Spanish dish, this paella features the unique flavor of makrut lime leaves.
Ingredients
- β1 cup paella rice
- β4-6 leaves makrut lime leavestorn into smaller pieces
- β2 tablespoons olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 medium red bell pepperdiced
- β1 can artichoke heartsdrained and chopped
- β2 cups chicken broth
- β2 tablespoons lime juice

Heat the olive oil in a large paella pan over medium-high heat.

Add the onion and garlic and cook until the onion is translucent.

Add the red bell pepper and cook for an additional 2-3 minutes.

Add the artichoke hearts, makrut lime leaves, and paella rice, and stir to combine.

Cook for 1-2 minutes, until the rice is coated in oil and slightly toasted.

Add the chicken broth, 1 cup at a time, stirring constantly until the liquid is absorbed.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes.
