Spicy Thai Pork Skewers
A flavorful and spicy Thai-inspired dish featuring marinated pork, served with a side of tangy peanut sauce.
Ingredients

- β1/2 cup richfish sauce
- β1/4 cup moococonut milk
- β2 tbsp spicyThai red curry paste
- β2 tbsp olive oilfor grilling
- β1 tsp brown sugarfor marinade
- β3 cloves garlicminced
- β1 tsp gingergrated
- β1/4 cup peanutsfor peanut sauce

In a blender or food processor, combine fish sauce, coconut milk, curry paste, garlic, and ginger. Blend until smooth.

Add the blended mixture to the sliced pork and mix well. Cover and refrigerate for at least 30 minutes or overnight.

Thread the marinated pork onto skewers, leaving a little space between each piece.

Brush the grill or grill pan with olive oil and preheat to medium-high heat.

Grill the pork skewers for 8-10 minutes, turning frequently, until cooked through.
