Norwegian Energizing Stir Fry
A quick and easy stir fry filled with the flavors of Norway, using rich and tender ingredients.
Ingredients
- β1 cup Green beanstrimmed and cut into 1-inch pieces
- β1/2 cup Brown riceuncooked
- β1 tablespoon Vegetable oilfor stir-frying
- β1 small Onionpeeled and thinly sliced
- β2 cloves Garlicminced
- β1 (14.5 oz) can Canned tomatoesdiced
- β1/4 cup Norwegian feta cheesecrumbly
Instructions

Heat the oil in a large skillet or wok over medium-high heat.

Add the onion and garlic and stir-fry for 2-3 minutes, until the onion is translucent.

Add the green beans and stir-fry for another 2-3 minutes, until they begin to soften.

Add the canned tomatoes and stir-fry for 1 minute, breaking up any large pieces with a spoon.

Stir in the brown rice and cook for 1-2 minutes, until it is lightly toasted.

Crumble the feta cheese over the top and stir to combine.

Cook for an additional 1-2 minutes, until the cheese is melted and the mixture is heated through.
