Thai Fried Pudding
A sweet and savory Thai inspired dessert, with crispy fried pudding. Crunchy on the outside, soft and chewy on the inside.
Ingredients
- β1 cup Pudding
- β1 cup Blackall-purpose flour
- β1/2 cup Richcoconut milk
- β2 tablespoons Thaifish sauce
- β1 tablespoon Stirvegetable oil
- β1/4 teaspoon Fryblack pepper
- β1 tablespoon Sugar
- β1 Eggbeaten

In a large bowl, whisk together the pudding, black flour, rich coconut milk, and thai fish sauce.

Add the stir vegetable oil and fry black pepper to the mixture, and mix until well combined.

Gradually add in the sugar and beaten egg, and mix until a smooth batter forms.

Heat a non-stick pan over medium heat.

Using a spoon, drop small amounts of the batter into the pan, and flatten slightly.

Fry the pudding until golden brown on both sides, about 2-3 minutes per side.

Remove the fried pudding from the pan, and place on a paper towel-lined plate to drain excess oil.

Serve the Thai fried pudding warm, dust with powdered sugar if desired.
