Thai-Style Pork Curry
A rich and flavorful Thai-style curry made with tender pork and crunchy vegetables.
Ingredients

- β1 can Coconut milkfull-fat

- β1 tablespoon Brown sugarnone
- β1/4 cup Fresh basil leavesnone
- β1 Red bell peppersliced

Heat oil in a large pan over medium-high heat.

Add the curry paste and cook for 1-2 minutes, until fragrant.

Add the pork and cook until browned on all sides, about 5 minutes.

Add the coconut milk, fish sauce, and brown sugar. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to medium-low and cook for 20-25 minutes, or until the pork is tender.

Add the bell pepper, carrots, and onion to the pan. Cook for an additional 5-10 minutes, or until the vegetables are tender.
