Ethiopian Lentil Stew with French Twist
A rich and flavorful stew combining the traditional Ethiopian flavors with a French twist, perfect for a cold winter night.
Ingredients

- β1 medium onion
- β3 cloves garlic
- β2 medium carrot
- β2 stalks celery
- β2 tsp misir wot spice blendavailable at most African or Middle Eastern markets
- β2 tbsp tomato paste
- β1 cup red wine
- β2 cups beef broth

Heat oil in a large Dutch oven over medium heat.

Add onion, garlic, carrot, and celery, and cook until the vegetables are tender, about 10 minutes.

Add the misir wot spice blend and cook for 1 minute.

Add the lentils, tomato paste, red wine, and beef broth.

Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, or until the lentils are tender.
