Peruvian Lamb Stew

Ingredients
- β2 pounds Lamb shoulder
- β1 cup Rich, yeasty Peruvian beersuch as CusqueΓ±a
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 cups Secco de corderoPeruvian lamb broth
- β1 medium Red bell pepperdiced
- β2 tablespoons Tomato paste
- β Salt and pepper
- β Fresh cilantrochopped (optional)

Heat the oil in a large Dutch oven over medium-high heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the beer, secco de cordero, red bell pepper, and tomato paste.

Stir to combine and bring to a boil.

Cover the pot and transfer to the oven.

Braise the stew for 2 1/2 hours, or until the lamb is tender.
