Moroccan Pilaf with Roasted Almonds
A flavorful and aromatic pilaf dish from Morocco, featuring roasted almonds and a blend of spices.
Ingredients
- β1 cup, sliced almondsroasted
- β1 cup arborio rice
- β2 tablespoons olive oil
- β1 medium, chopped onion
- β2 cloves, minced garlic
- β1 teaspoon cumin
- β1 teaspoon coriander
- βto taste salt
- βto taste black pepper
- β2 tablespoons chopped fresh parsley

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the sliced almonds and cook for 2-3 minutes, until lightly toasted.

Add the cumin, coriander, salt, and black pepper. Cook for 1 minute.

Add the arborio rice and cook for 1-2 minutes, until lightly toasted.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender.
