Peruvian Stuffed Papas Rellenas
A twist on traditional Peruvian papas rellenas, these stuffed potatoes are filled with a rich mixture of ground turkey and spices.
Ingredients
- β1 kg 4 large potatoes
- β120g 1 cup ground turkey
- β1/2 1 small onion
- β2 2 cloves garlic
- β5g 1 teaspoon cumin
- β5g 1 teaspoon paprika
- βto taste Salt and pepper
- β30g 2 tablespoons olive oil

1. Preheat the oven to 180Β°C (350Β°F).

2. Bake the potatoes for 45-60 minutes, or until they're tender when pierced with a fork.

3. Meanwhile, heat the olive oil in a pan over medium heat.

4. Add the onion and cook until softened, about 5 minutes.

5. Add the garlic, cumin, and paprika. Cook for 1 minute.

6. Add the ground turkey and cook, breaking it up with a spoon, until it's no longer pink, about 5 minutes.

7. Season with salt and pepper to taste.

8. Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out some of the flesh to make room for the filling.

9. Stuff each potato with the turkey mixture and top with the scooped-out potato flesh.

10. Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, or until heated through.
