Ukrainian Pork Casserole
A hearty, comforting casserole filled with tender pork, richly flavored with roasted vegetables and spices.
Ingredients
- ●1 lb pork shoulder, cut into 1-inch cubespreferably with a bit of fat
- ●1 large onion, choppedabout 2 cups
- ●3 cloves garlic, mincedabout 1 tablespoon
- ●2 medium carrots, peeled and choppedabout 2 cups
- ●2 large potatoes, peeled and choppedabout 2 cups
- ●2 tablespoons all-purpose flourto thicken the sauce
- ●1 cup beef brothyou can use chicken broth as well
- ●1 cup sour creamto add a tangy flavor
- ●1/4 cup chopped fresh parsleyto garnish

Preheat the oven to 375°F (190°C).

Brown the pork cubes in a large skillet over medium-high heat, about 5 minutes.

Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent, about 5 minutes.

Add the chopped carrots and potatoes to the skillet and sauté for another 5 minutes.

Transfer the contents of the skillet to a large baking dish.

In a small bowl, mix together the flour and beef broth until smooth.

Pour the flour-beef broth mixture over the pork and vegetables in the baking dish.

Stir in the sour cream and season with salt and pepper to taste.

Bake the casserole in the preheated oven for 30 minutes.

Stir the casserole and continue baking for another 15-20 minutes, or until the potatoes are tender.
