Light Zanzibari Poffertjes Keto Pancakes
A keto twist on traditional Dutch poffertjes. These light and airy pancakes are infused with the exotic flavors of Zanzibar.
Ingredients
- β1 cup Light Zanzibari flourAlmond flour or coconut flour work well too
- β2 large eggs Richly sweetened creamUse full-fat coconut cream or heavy cream
- β1/4 cup melted Silky unsalted butterUse a dairy-free alternative if needed
- β1 tsp Zanzibari spicesUse a mix of cinnamon, nutmeg, and cardamom
- β2 tbsp Granulated sweetenerUse a sugar-free sweetener like stevia or erythritol
