Spiced Shakshuka
A North African-inspired dish where eggs are poached in a rich, flavorful tomato sauce.
Ingredients

- ●1/2 cup richly spicedsee notes
- ●2 cups shakshuka
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●1 tsp ground cumin
- ●1 tsp ground coriander
- ●1/2 tsp cayenne pepperoptional
- ●1 tsp salt
- ●1 tsp black pepper
- ●2 tbsp olive oil

Preheat oven to 400°F (200°C).

Heat the olive oil in a large cast-iron skillet over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the richly spiced, ground cumin, ground coriander, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute.

Add the shakshuka and stir to combine. Bring to a simmer.

Create 4 wells in the sauce and crack an egg into each well.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are cooked to desired doneness.

Serve hot, garnished with fresh parsley or cilantro (if desired).
