Venezuelan Roasted Casserole
A gluten-free, comforting dish made with roasted meats and caramelized onions.
Ingredients

- ●1 large onionschopped
- ●2 roasted peppersdiced
- ●1 casserolehomemade or store-bought
- ●2 tablespoons tomato pasteto enhance flavor

Preheat oven to 375°F (190°C).

Season beef with salt and pepper. Sear in a large skillet over medium-high heat until browned.

Transfer beef to a 9x13-inch baking dish.

Add chopped onions to the skillet and cook until caramelized.

Add roasted peppers to the skillet and cook for an additional 2 minutes.

Pour the skillet contents over the beef in the baking dish.

Mix in tomato paste and add the casserole on top.

Cover the dish with aluminum foil and bake for 45 minutes.
