Australian Roast Beef with Roasted Vegetables
A classic Australian-inspired roast beef dish with tender roast vegetables.
Ingredients

- ●2-3 potatoes
- ●1 large onion
- ●2 cloves garlic
- ●2 sprigs rosemaryfresh rosemary leaves for garnish

Preheat the oven to 220°C (425°F).

Season the beef roast with salt and pepper.

Heat 1 tablespoon of olive oil in a large oven-safe pan over high heat.

Sear the beef roast on all sides until browned, about 2-3 minutes per side.

Transfer the pan to the preheated oven and roast for 20 minutes per kilogram, or until the internal temperature reaches 60°C (140°F) for medium-rare.

While the beef is roasting, toss the carrots, potatoes, and onion with the remaining 1 tablespoon of olive oil, salt, and pepper on a baking sheet.

Roast the vegetables in the oven for 20-25 minutes, or until tender and lightly browned.

Remove the beef from the oven and let it rest for 10-15 minutes before slicing.

Serve the sliced beef with the roasted vegetables and garnish with fresh rosemary leaves.
