Pandan Sopes with Roasted Meats
A twist on traditional Mexican sopes, these are filled with roasted meats and topped with a side of chewy leafy greens.

Ingredients
- β4 pandan leavesfresh leaves
- β1 cup roasted porkshredded
- β2 tbsp soy sauceor to taste
- β1 tbsp lime juiceor to taste
- β8 sopesstore-bought or homemade
- β1 cup chewy leafy greenssuch as kale or collard greens
- β1 cup shredded cheese (optional)Monterey Jack or Cheddar

Instructions

Preheat oven to 400Β°F (200Β°C).

Shred the roasted pork and mix with soy sauce and lime juice. Set aside.

Prepare the sopes according to package instructions.

Top each sope with a spoonful of the pork mixture, followed by a sprinkle of shredded cheese (if using).
