Al Pastor Tacos
A twist on traditional Mexican tacos, using al pastor-style pork and topped with fresh cilantro and onion.
Ingredients
- ●1 pound Boneless pork shoulderCut into thin strips
- ●1/2 cup Roasted onionDiced
- ●8-10 count Chewy tortillasWarm them before serving
- ●1/4 cup Mexican cremaOptional, for garnish
- ●1/4 cup Fresh cilantroChopped
- ●2 Lime wedgesFor serving
- ●2 tablespoons Al pastor seasoningAvailable at most grocery stores or online
- ●2 tablespoons Olive oilFor cooking
- ●to taste Salt and pepperFor seasoning

1. Preheat your grill to 400°F (200°C).

2. In a large bowl, whisk together al pastor seasoning, lime juice, and olive oil.

3. Add the pork shoulder to the bowl and toss to coat with the marinade.

4. Grill the pork for 5-7 minutes per side, or until it reaches an internal temperature of 145°F (63°C).

5. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

6. Slice the grilled pork into thin strips.

7. Assemble the tacos by placing a few slices of pork onto a tortilla, followed by a spoonful of roasted onion, a sprinkle of cilantro, and a dollop of Mexican crema.
