Vietnamese Spring Rolls
A delicious and refreshing snack or appetizer made with crispy spring roll wrappers, crunchy vegetables, and savory tofu. Serve with a sweet chili sauce for dipping.
Ingredients
- β12-15 wrappers Spring roll wrappers
- β1 block (12 oz) Tofudrained and cut into small pieces
- β1 cup Carrotsgrated
- β1 cup Cucumbersliced
- β1 cup Cabbageshredded
- β1 cup Rice noodlescooked
- β1/4 cup Roasted peanutschopped
- β1/4 cup Crunchy vietnamese chili sauce
Instructions

Fill a large bowl with warm water.

Dip a spring roll wrapper into the water for about 10 seconds, until it becomes soft and pliable.

Remove the wrapper from the water and place it on a clean surface.

Place a few pieces of tofu, carrots, cucumber, and cabbage in the center of the wrapper.

Add a few strands of rice noodles and some chopped peanuts on top of the vegetables.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling ingredients.

Serve the spring rolls with a sweet chili sauce for dipping.
