Australian Pecorino Bake
A delicious Australian-inspired dish made with gooey pecorino cheese and roasted ingredients.
Ingredients
- β2 large Australian sweet potatoes
- β1 cup, crumbled Pecorino cheese
- β2 cloves Roasted garlic
- β1 sprig Fresh rosemary
- β1 Baked egg
- βto taste Salt and pepper

Preheat oven to 400Β°F (200Β°C).

Peel and chop the sweet potatoes into 1-inch pieces.

In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper until they're evenly coated.

Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender.

While the sweet potatoes are roasting, mix the crumbled pecorino cheese with minced roasted garlic.

Once the sweet potatoes are done, let them cool slightly.

In a large skillet, crack in the egg and scramble it until cooked through.

Add the scrambled egg to the skillet with the roasted sweet potatoes and toss to combine.
