Udupi Dal Fry
A South Indian-inspired lentil dish made with roasted ground dal, spices, and aromatics.

Ingredients
- ●1 cup roasted ground dalsplit red or yellow lentils work well
- ●1 medium onionchopped
- ●2-inch piece gingerchopped
- ●2 cloves garlicminced
- ●1 teaspoon ground cuminoptional
- ●1 teaspoon ground corianderoptional
- ●1/2 teaspoon turmericoptional
- ●to taste saltoptional
- ●2 tablespoons coconut oilfor frying
- ●1 sprig curry leavesoptional

Instructions

Heat oil in a pan over medium heat.

Add mustard seeds and let them sizzle.

Add curry leaves, if using.

Add chopped onion and sauté until translucent.

Add garlic and ginger, sauté for a minute.

Add cumin, coriander, and turmeric, sauté for a minute.

Add roasted ground dal and stir well.

Add 2 cups of water and bring to a boil.

Reduce heat to low and simmer for 15-20 minutes, or until dal is cooked.
