Roasted Mediterranean Paella
A flavorful and indulgent take on the classic Spanish dish, combining the richness of roasted vegetables with the brightness of Mediterranean herbs.
Ingredients

- ●2 cups Vegetable broth
- ●1 cup Roasted red peppersdiced
- ●1 medium Zucchinidiced
- ●1/4 cup Almondssliced
- ●2 tsp Mediterranean seasoning
- ●2 tbsp Olive oil
- ●to taste Salt

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the diced zucchini and sauté for 3-4 minutes, until tender.

Add the roasted red peppers and cook for an additional 2 minutes.

Add the paella rice and cook, stirring constantly, for 1-2 minutes.
