Jamaican Chickpea Bowl
A flavorful and nutritious bowl filled with Jamaican-spiced chickpeas, roasted vegetables, and a hint of smokiness.
Ingredients

- β2 tsp jamaican jerk seasoning
- β1 cup roasted red peppers
- β1/2 cup onion
- β2 cloves garlic
- β2 tbsp olive oil
- β1/4 cup coconut milk
- βto taste salt
- βto taste black pepper
- β1/4 cup fresh cilantro
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the onion and garlic and cook until softened, about 3-4 minutes.

Add the roasted red peppers and cook for an additional 2 minutes.

Add the chickpeas, Jamaican jerk seasoning, salt, and black pepper. Stir to combine.

Cook for an additional 2-3 minutes, until the chickpeas are coated in the spice mixture.
