Kenyan Sardine Tagine
A flavorful Kenyan-inspired stew made with sardines, roasted spices, and a hint of tagine, perfect for a weeknight dinner.
Ingredients
- β2 (8 oz) cans Sardines in Water
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tsp Roasted Gingergrated
- β1 tsp Roasted Cuminground
- β1 tsp Tagine Spice Mixstore-bought or homemade
- β2 tbsp Tomato Paste
- β1 can (15 oz) Chickpeas, drained and rinsed
- β1/4 cup Chopped Fresh Cilantro
- β Salt and Pepper

Heat oil in a large saucepan over medium-high heat.

Add onion and cook until softened, about 3-4 minutes.

Add garlic and cook for 1 minute, until fragrant.

Add sardines, roasted ginger, roasted cumin, tagine spice mix, and tomato paste. Stir to combine.

Add chickpeas and stir to combine.

Bring the mixture to a simmer and cook for 10-12 minutes, or until the sauce has thickened.

Season with salt and pepper to taste.

Serve the tagine hot, garnished with chopped fresh cilantro.
