Roasted Pepper and Manchego Tart
A simple and flavorful tart that combines the sweetness of roasted peppers with the richness of Manchego cheese.
Ingredients
- β1 cup, crumbled Manchego cheese
- β2, sliced Roasted peppers
- β1 sheet Light puff pastry
- β1 tablespoon Spanish olive oil
- βto taste Salt
- βchopped (optional) Fresh parsley

Preheat oven to 400Β°F (200Β°C).

Roll out the puff pastry to a thickness of 1/8 inch.

Transfer the pastry to a baking sheet.

Spread the sliced peppers over the center of the pastry, leaving a 1-inch border around the edges.

Sprinkle the crumbled Manchego cheese over the peppers.

Drizzle the Spanish olive oil over the cheese.

Fold the edges of the pastry up over the filling, pressing gently to seal.
