Middle Eastern Roasted Dumplings
A flavorful and aromatic dish featuring roasted vegetables and pan-fried dumplings, inspired by the rich flavors of Middle Eastern cuisine.
Ingredients
- ●1 package Dumpling wrappers (gluten-free)available at most Asian grocery stores
- ●1 medium Roasted eggplantroasted at 400°F (200°C) for 30 minutes
- ●1 medium Roasted zucchiniroasted at 400°F (200°C) for 20 minutes
- ●1 medium Roasted red bell pepperroasted at 400°F (200°C) for 30 minutes
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 tsp Ground cuminadjust to taste
- ●1 tsp Ground corianderadjust to taste

Preheat oven to 400°F (200°C).

Roast the eggplant, zucchini, and red bell pepper for 20-30 minutes or until tender.

In a large pan, heat 2 tbsp of oil over medium heat.

Add the chopped onion and cook until softened.

Add the minced garlic and cook for 1 minute.

Add the roasted vegetables, cumin, coriander, salt, and pepper. Stir to combine.

In a separate pan, heat 1 tbsp of oil over medium heat.

Pan-fry the dumpling wrappers until golden brown.

Serve the pan-fried dumplings with the roasted vegetable mixture.
