Italian Quesadilla Chili
A spicy twist on the classic quesadilla, filled with oozy cheese and chili peppers, served with a side of roasted vegetables.
Ingredients
- β2 Roasted Red Peppersdiced
- β1 cup Oozy Mozzarella Cheeseshredded
- β1 tsp Chili Flakesoptional
- β1 Quesadilla Filling (pre-made)store-bought
- β1/4 cup Fresh Basilchopped
- βto taste Salt
- βto taste Black Pepper
- β2 tbsp Olive Oilfor brushing
Instructions

Preheat a large skillet or griddle over medium heat.

Brush both sides of the quesadilla with olive oil.

Place the quesadilla in the skillet and sprinkle with roasted red peppers and mozzarella cheese.

Cook for 2-3 minutes or until the cheese is melted and the tortilla is crispy.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is crispy.

Sprinkle with chili flakes if desired.

Transfer the quesadilla to a cutting board and sprinkle with chopped basil.

Cut the quesadilla into wedges and serve immediately.
