Jamaican Chicken Tikka
A popular Indian-inspired dish with marinated chicken, roasted in the oven and served with a side of pillowy naan bread.
Ingredients
- β1 1/2 pounds chicken breastboneless and skinless
- β1 cup soya yogurtplain, unflavored
- β2 tablespoons jamaican jerk seasoningstore-bought or homemade
- β2 tablespoons lemon juicefreshly squeezed
- β2 tablespoons ghee or vegetable oilfor brushing
- β4-6 pieces naan breadpillowy, store-bought or homemade
- β1 cup cucumber raitastore-bought or homemade
- β1/4 cup chopped cilantrofreshly chopped

1. In a large bowl, whisk together soya yogurt, jamaican jerk seasoning, and lemon juice.

2. Add the chicken breast to the marinade and mix until coated. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with aluminum foil or parchment paper.

4. Remove the chicken from the marinade and place it on the prepared baking sheet.

5. Brush the chicken with ghee or vegetable oil and roast in the preheated oven for 20-25 minutes, or until cooked through.

6. While the chicken is cooking, heat a grill or grill pan over medium-high heat.

7. Brush the naan bread with ghee or vegetable oil and grill for 1-2 minutes per side, or until lightly charred.

8. To serve, slice the roasted chicken and serve with grilled naan bread, cucumber raita, and chopped cilantro.

9. Garnish with additional cilantro, if desired.
