Quick Asparagus Bowl
A simple and healthy bowl filled with roasted asparagus, crispy tofu, and a drizzle of soy sauce.
Ingredients
- β1 pound asparagusfresh or frozen
- β1 block firm tofupressed and drained
- β2 tablespoons soy saucelow sodium
- β1 tablespoon olive oilfor roasting
- β2 cloves garlicminced
- β1 teaspoon gingergrated
- βto taste saltoptional
- βto taste pepperoptional
- β1/4 cup green onionschopped

Preheat the oven to 425Β°F (220Β°C).

Line a baking sheet with parchment paper.

Toss the asparagus with olive oil, garlic, and ginger on the prepared baking sheet.

Roast in the preheated oven for 12-15 minutes, or until tender.

While the asparagus is roasting, cook the tofu in a non-stick pan over medium-high heat.

Once the tofu is golden brown, remove it from the pan and cut it into small pieces.

In a small bowl, whisk together soy sauce and a pinch of salt and pepper.

To assemble the bowls, place a portion of the roasted asparagus on the bottom.

Add the cooked tofu on top of the asparagus.

Drizzle the soy sauce mixture over the tofu.
