Jamaican Beef Skewers
Tender beef skewers infused with the bold flavors of Jamaica, perfect for a summer evening.
Ingredients
- β500g beef filletcut into 1.5cm cubes
- β2 tbsp Jamaican jerk seasoningstore-bought or homemade
- β1 tsp brown sugaradjust to taste
- β1 tbsp soy sauceoptional
- β20g roasted peanutschopped
- β4 snappy scallionschopped
- β2 tbsp lemon juicefreshly squeezed

1. Preheat grill to medium-high heat (180Β°C).

2. In a large bowl, whisk together jerk seasoning, brown sugar, soy sauce (if using), and lemon juice.

3. Add beef cubes to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.

4. Remove beef from marinade, letting any excess liquid drip off.

5. Thread beef cubes onto skewers, leaving a small space between each piece.

6. Grill skewers for 8-10 minutes per side, or until beef reaches 63Β°C.

7. During the last 2 minutes of grilling, brush skewers with peanut oil and sprinkle with chopped peanuts and scallions.
