Spanish Paella with Roasted Peppers
A classic Spanish dish made with sautéed vegetables and smoky roasted peppers, served over a bed of flavorful rice.
Ingredients
- ●1 cup Spanish rice
- ●2 large Roasted peppersany color, thinly sliced
- ●1 medium Oniondiced
- ●2 cloves Garlicminced
- ●1 large Tomatodiced
- ●1 cup Green beanstrimmed
- ●2 tablespoons Olive oil
- ●1 teaspoon Smoked paprikaoptional
- ●to taste Salt
- ●to taste Black pepper
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the diced tomato and cook until the liquid has evaporated, about 5 minutes.

Add the sliced roasted peppers and cook for an additional 2-3 minutes.

Add the green beans and cook until tender, about 5-7 minutes.

Add the Spanish rice and smoked paprika (if using) to the pan.

Cook for 2-3 minutes, stirring constantly, until the rice is coated in oil and slightly toasted.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.

Season with salt and black pepper to taste.
