Spicy Borlotti Bean Stew
A flavorful and spicy stew originating from Canada, with the addition of Indian spices, made with roasted borlotti beans.
Ingredients

- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 inch Gingergrated
- ●2 medium Tomatodiced
- ●2 tablespoons Spicy Tomato Pasteadjust to taste
- ●1 teaspoon Cumin Powderadjust to taste
- ●1 teaspoon Coriander Powderadjust to taste
- ●1/2 teaspoon Cayenne Pepperadjust to taste
- ●2 cups Water

Heat oil in a pan over medium heat.

Add chopped onion and sauté until translucent.

Add minced garlic and grated ginger, sauté for 1 minute.

Add diced tomato and cook until they start to break down.

Add spicy tomato paste, cumin powder, coriander powder, and cayenne pepper.

Cook for 1-2 minutes, until the spices are fragrant.

Add roasted borlotti beans, water, and adjust seasoning as needed.
