Roasted Middle Eastern Chicken
A flavorful roasted chicken dish with a blend of Middle Eastern spices and a hint of heat.
Ingredients

- ●2 tbsp olive oil
- ●1 tsp cumin
- ●1 tsp coriander
- ●1/2 tsp paprika
- ●1/4 tsp cayenne pepper
- ●1 tsp salt
- ●1 tsp black pepper
- ●2 tbsp lemon juice

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together cumin, coriander, paprika, cayenne pepper, salt, and black pepper.

Rub the spice mixture all over the chicken.

Drizzle olive oil over the chicken and rub it in.

Squeeze lemon juice over the chicken and sprinkle minced garlic on top.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).
