Mexican Roasted Chicken Bowl
A delicious and easy to make Mexican inspired dish, perfect for a weeknight dinner. This recipe serves four and can be customized with your favorite toppings.
Ingredients

- ●2 tablespoons Mexican seasoning
- ●2 tablespoons olive oil
- ●1 red bell pepper
- ●1 yellow onion
- ●2 tomato
- ●1 teaspoon cumin
- ●1 teaspoon chili powder
- ●1 teaspoon salt
- ●1/2 teaspoon black pepper
- ●2 cups cooked brown rice

Preheat oven to 400°F (200°C).

Season the chicken with cumin, chili powder, salt, and black pepper.

Heat olive oil in a large skillet over medium-high heat. Sear the chicken until browned, then transfer to a baking sheet and roast in the oven for 20-25 minutes.

While the chicken is roasting, heat some more olive oil in the skillet and sauté the red bell pepper, onion, and tomato until tender.

Fluff the cooked brown rice with a fork and divide among four bowls.
