Turkish Eggs Menemen
A traditional Turkish dish made with eggs, onions, and spices, often served as a snack or light meal.
Ingredients

- β2 Roasted Red PeppersSliced
- β1/2 OnionChopped
- βto taste Turkish Spices (Sumac, Paprika, Salt, Black Pepper)
- β1 clove GarlicMinced
- βa few sprigs Fresh ParsleyChopped
Instructions

Crack the eggs into a bowl and whisk them together with a fork.

Heat a non-stick pan over medium heat and add a small amount of oil.

Add the chopped onion to the pan and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the sliced roasted red peppers to the pan and cook for 2-3 minutes.

Pour the whisked eggs over the vegetables in the pan and cook until the eggs start to set.

Sprinkle the Turkish spices over the eggs and cook for another minute.

Use a spatula to gently fold the eggs over the filling, so that the uncooked egg flows to the top.

Continue cooking for another 2-3 minutes, until the eggs are cooked through.
