Middle Eastern Mujadara Samphire Bowl
A flavorful and nutritious bowl filled with roasted mujadara, roasted vegetables and topped with crispy samphire and a drizzle of robata oil.
Ingredients
- β1 cup Mujadaracooked and mashed
- β1 bunch Samphirechopped
- β2 tbsp Robata oilfor drizzling
- β1 tsp Cuminground
- β1 tsp Paprikasmoked
- β2 cloves Garlicminced

Preheat the oven to 200Β°C (400Β°F).

Toss the samphire with a pinch of salt and roast in the oven for 5 minutes.

In a large pan, heat the robata oil over medium heat. Add the cumin and paprika and cook for 1 minute.

Add the garlic and cook for a further minute.

Add the mujadara and stir to combine with the spice mixture.

Transfer the mujadara mixture to a serving bowl and top with roasted samphire.

Drizzle with additional robata oil if desired.
