Yangzhou Fried Rice
A classic Chinese dish made with rice, vegetables, and a hint of yangzhou flavors.
Ingredients
- β2 cups Yangzhou ricepreferably day-old rice
- β1 cup Vegetables (e.g. peas, carrots, green onions)chopped
- β2 tbsp Robust soy sauceor to taste
- β1 tsp Dense sesame oilor to taste
- β1/2 cup Fried shallotschopped
- βto taste Salt
- βto taste Pepper
Instructions

Heat 1 tsp sesame oil in a wok or large skillet over medium-high heat.

Add vegetables and cook until they begin to soften, about 3-4 minutes.

Push vegetables to one side of the wok. Crack in 2 eggs and scramble them.

Mix eggs with vegetables.

Add cooked Yangzhou rice to the wok, breaking up any clumps with a spatula.

Stir-fry the rice with vegetables and eggs for 2-3 minutes.

Add robust soy sauce and fried shallots. Stir-fry for another minute.

Season with salt and pepper to taste.

Transfer the fried rice to a serving platter and serve immediately.
