Mitsuba and Spanish Chicken Stir Fry
A quick and flavorful stir fry made with mitsuba, spanish chorizo, and chicken, all in a savory sauce. This Chinese-inspired recipe is perfect for a weeknight dinner.
Ingredients
- β1 lb Boneless, skinless chicken breast
- β1/2 cup, sliced Spanish chorizo
- β2 cups, chopped Mitsuba leaves
- β2 tbsp Vegetable oil
- β2 cloves, minced Garlic
- β1 tsp, grated Ginger
- β2 tbsp Soy sauce
- β1 tbsp Hoisin sauce
- β1 tsp Sesame oil
- βto taste Salt
- βto taste Black pepper

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the sliced chorizo and cook until browned, about 2-3 minutes.

Remove the chorizo from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok.

Add the chicken to the wok and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the wok and set aside with the chorizo.

Add the minced garlic and grated ginger to the wok and cook for 1 minute.

Add the chopped mitsuba leaves to the wok and cook until wilted, about 2-3 minutes.

Add the cooked chorizo and chicken back to the wok.

In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil.
