Kung Pao Chicken Hash
A spicy Chinese-inspired dish made with chicken, hash, and a variety of vegetables in a savory sauce.
Ingredients
- β1 pound chicken breast
- β1 cup hashany type of hash
- β2 tablespoons vegetable oil
- β1/4 cup scallionschopped
- β2 cloves garlicminced
- β1 tablespoon gingergrated
- β1 teaspoon szechuan peppercornsground
- β2 tablespoons szechuan saucestore-bought or homemade
- βto taste salt
- βto taste pepper
Instructions

Heat the vegetable oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned on both sides and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the scallions, garlic, and ginger to the skillet and cook until the scallions are softened, about 2-3 minutes.

Add the hash to the skillet and cook until crispy and golden brown, about 4-5 minutes.

Add the Szechuan peppercorns and Szechuan sauce to the skillet and stir to combine.

Return the chicken to the skillet and stir to coat with the sauce.

Season with salt and pepper to taste.
