Russian Bean Pilaf
A hearty, comforting pilaf dish inspired by Russian cuisine, filled with the rich flavors of black beans and robust spices.
Ingredients
- β1 cup (250g) black beanscanned or cooked
- β1 cup (120g) robust pilaf mix
- β1/2 cup (60g) uncooked white rice
- β1 tsp black pepper
- β2 tbsp olive oil
- β0.5 tsp salt
- β1 tsp dried onion
- β0.5 tsp cumin powder
- β1/4 cup (10g) chopped fresh parsley

Heat the olive oil in a large saucepan over medium heat.

Add the robust pilaf mix and cook for 2-3 minutes, stirring constantly.

Add the uncooked white rice, black pepper, salt, dried onion, and cumin powder.

Cook for another 2-3 minutes, stirring constantly.

Add the black beans and stir well.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes or until the water is absorbed.

Turn off the heat and let it rest for 5 minutes.

Fluff the pilaf with a fork and garnish with chopped fresh parsley.
