Classic Greek Chicken
A traditional Greek-inspired dish with a tangy avgolemono sauce, glazed chicken, and a side of robustly flavored roasted vegetables.

- β4-6 Chicken breasts

- β2 cups Mixed roasted vegetables
- β1 tsp Greek seasoning
- β2 tbsp Olive oil
- β Salt and pepper
- β1 cup Glazed yogurt
- β1/4 cup Fresh parsley
- β1/4 cup Lemon juice
- β1 tsp Garlic powder
- β1 tsp Onion powder
- β Black pepper

1. Preheat the oven to 400Β°F (200Β°C).

2. In a small bowl, mix together the Greek seasoning, olive oil, salt, and pepper. Rub the mixture all over the chicken breasts, making sure they are evenly coated.

3. Place the chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through.

4. While the chicken is baking, prepare the avgolemono sauce by whisking together the lemon juice, garlic powder, onion powder, and 1 cup of water in a small bowl.

5. To make the glazed yogurt, mix together the yogurt, lemon juice, and 1 tsp of garlic powder in a small bowl.

6. To roast the vegetables, toss them with olive oil, salt, and pepper on a baking sheet and roast in the oven for 20-25 minutes, or until tender.

7. To assemble the dish, place a cooked chicken breast on a plate, top with a spoonful of avgolemono sauce, and serve with a side of roasted vegetables.
