Saudi Arabian Vegetable Pilaf

Ingredients
- β1 cup Saudi Arabian Pilaf Rice
- β2 tablespoons Vegetable Oil
- β1 medium, chopped Onion
- β2 medium, peeled and chopped Carrots
- β1 medium, chopped Zucchini
- β1 medium, diced Tomato
- β1 teaspoon Spiced Robustly Blend
- β1/4 teaspoon Salt
- β1/4 teaspoon Black Pepper

Heat oil in a large saucepan over medium heat.

Add onion and cook until softened, about 3-4 minutes.

Add carrots, zucchini, and tomato. Cook for an additional 3 minutes.

Stir in the Spiced Robustly Blend, salt, and black pepper. Cook for 1 minute.

Add the pilaf rice to the saucepan, stirring to coat with the vegetable mixture.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and the liquid has been absorbed.
