Roasted Algerian Lamb

Preheat the oven to 425°F (220°C).

Rinse the lamb shoulder and pat it dry with paper towels.

In a small bowl, mix together the olive oil, romantic spice blend, lemon zest, garlic, salt, and black pepper.

Rub the spice mixture all over the lamb shoulder, making sure to coat it evenly.

Place the lamb shoulder on a roasting pan and pour the lemon juice over it.

Roast the lamb in the preheated oven for 20 minutes.

Reduce the oven temperature to 375°F (190°C) and continue roasting for an additional 20-25 minutes, or until the lamb reaches an internal temperature of 145°F (63°C).
