Jamaican Jerk Chicken Bake
A spicy and aromatic chicken dish with a Jamaican twist, perfect for a romantic dinner. The combination of jerk seasoning and tarragon adds a unique flavor profile.

- β1 1/2 pounds chicken breastboneless and skinless
- β2 tablespoons jamaican jerk seasoningstore-bought or homemade
- β2 tablespoons olive oilfor brushing
- β2 tablespoons fresh tarragonchopped
- β1 medium oniondiced
- β2 cloves garlicminced
- β1 medium bell pepperdiced
- β2 medium potatodiced
- β2 tablespoons tomato pasteoptional

In a small bowl, mix together jerk seasoning, olive oil, tarragon, onion, garlic, and bell pepper.

Place the chicken breast in a large baking dish and brush with the jerk seasoning mixture.
